According to Wikipedia, "authenticity" (an originally Greek word!) refers to the truthfulness of origins, attributions, commitments, sincerity, devotion, and intentions, while the dictionary wiktionary, adds: 

"the quality of being genuine or not corrupted from the original". There is also the definition of "authentic":
- Of the same origin as claimed ; genuine

Authenticity bookIn their new book "Authenticity - What consumers really want", James H. Gilmore and B. Joseph Pine II, authors of best-sellers "The Experience Economy: .." and "Mass Customization: ..." (versions Harvard Business Review), writing:

"... People are increasingly seeing the world in terms of true and false and want to buy something real from someone genuine, not something fake from someone phony."

Authentic Tastes
Many Chefs have tried to define "authentic food" under these definitions, but better seems to be the approach of a friend on a social networking website where it states: "authentic food means that it is very similar to what you actually get from someone who is very able to create this kind of food”, while another goes even further:" if it is not authentic is not worth my time".

A group of people with knowledge of cooking, either well-known chefs or housewives who know well the recipes in their region, will talk about the authenticity of products and flavors of "authentic Greece".

However, we will keep on saying that the most transparent statement of "authenticity" is visiting one of the workshops where our products are made, in order to verify yourselves whether our products have the source we claim.
