Olives & Olive-oil

No product has been indistinguishable with the Mediterranean Diet so much as the Olive oil. One of the main characteristics of the Mediterranean Diet is that fat intake relies to a much greater extent on plants than on animals. Olive oil, as a vegetable fat, contains more polyunsaturated and monounsaturated fatty acids and contains no "bad" cholesterol (in contrast to animal fat that contain increased saturated fatty acids and cholesterol and cause significant impact on health).

Olive oil is also rich in antioxidants, particularly polyphenols, which help to fortify the human body against oxidative stress and, consequently, prevent premature aging of cells. It is an important dietary source of vitamin E, which is highly soluble in fat and with strong antioxidant activity. Note that olive oil is the only (vegetable) oil derived from the whole fruit and not from seed.

Extensive scientific studies have documented the relationship of Olive Oil with the model of the Mediterranean Diet and upgraded health.
